Holiday Cheese Ball

Ingredients:

3 tablespoon finely chopped pecans
1 package (8 ounces) Neufchatel cream cheese (at room temperature)
3 green onions (finely chopped with tops, 1/3 cup)
1 teaspoon Dijon mustard
1/4 teaspoon hot red pepper sauce
1/4 teaspoon minced garlic
1 cup shredded sharp cheddar cheese (4 ounces)
1/4 cup minced parsley

Directions:

Step 1
Preheat the oven to 350° and spread out the pecans in a small pan. Bake, tossing once, for 8 minutes or until toasted. Meanwhile, in a small bowl, place the cream cheese, onions, mustard, red pepper sauce, and garlic. With an electric mixer at moderate speed, beat for 3 minutes or until well blended. Stir in the cheddar cheese. Wrap the mixture in plastic wrap, shape into a 4-inch ball, and chill for 15 minutes.

Step 2
On wax paper, toss the toasted pecans with the parsley. Unwrap the cheese ball and carefully roll it in the parsley mixture, coating it completely. Rewrap in plastic wrap and refrigerate until time to serve. Place the ball on a serving platter and surround with an assortment of crackers.

Gingerbread Men

Ingredients:

3 and 1/4 cups flour
1.2 tsp baking soda
1/4 tsp salt
1 tsp ground cinnamon
2 tsp ground cloves
1 cup salted butter, softened
3/4 cup dark brown sugar, firmly packed
1 large egg
1/2 cup unsulfered molasses
2/3 cup confectioners sugar
1 - 2 tsp milk

Directions:

  • Preheat oven to 325'

  • Whisk together flour, salt, cinnamon, baking soda, ginger, and cloves

  • Cream butter and sugar. Scrape down sides of bowl. Add egg and molasses and beat on medium speed until smooth.

  • Scrape down bowl and add flour mixture, blend on low speed until just combined -- do not over mix!

  • Separate dough into 2 balls and flatten into disks. Wrap each disk tightly in plastic wrap and refrigerate 1 hour.

  • On floured surface with floured rolling pin, roll dough out to 1/4" thickness. With floured cookie cutters cut into shapes. Gather scraps and re-roll dough until all is used. Place on ungreased baking sheets about 1/2" apart.

  • Bake 9-11 minutes -- do not brown. Transfer to cool, flat surface and cool.
Preparing Icing:

  • Whisk sugar and milk until smooth but still liquid.

  • Add extra milk if seems dry.

  • Spoon icing into a pastry bag with small piping tip, or other icing dispenser.

  • Decorate as desired.
Eggnog Muffins

Ingredients:

3 cups flour
1 tablespoons baking powder
1/2 cup sugar
1 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
2 large eggs
1 cup milk
1/2 cup melted butter, margarine or oil
2 teaspoons rum or rum extract
1 tablespoon sugar
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon

Directions:

In a large bowl, combine flour, baking podwer, sugar, nutmeg and cinnamon. In a medium bowl, whisk eggs, milk, oil and rum. Pour liquid ingredients over dry, stir just until mixed. Spoon batter evenly into 12 greased, 2-1/2 inch muffin cups.

In a small container, combine sugar, nutmeg and cinnamon. Sprinkle evenly over tops of muffins. Bake in a 400F oven for 20 minutes or until golden.
